Cooking tip #14: How fresh are your eggs?



Cooking Tip #14:

I talked about the two different types of egg white - the runny white and the firm white around the yolk- in my tip about poached eggs. You can tell how fresh an egg is by cracking it onto a plate or pan and looking at the ratio of firm to runny white. If there is a lot of firm (not spread out) egg white around the yolk, it is very fresh. If all of the egg white has turned into runny white it is not fresh. If the egg white is runny it doesn't mean it has gone bad, just that it is not as fresh as can be.... That said, if the egg has gone bad you will smell it...
